Colombia Finca Mallorca



Hacienda Mallorca is a farm focussed on detail to ensure the highest quality processing of their coffees. For this particular Yellow Bourbon, Santiago Londoño used a washed process with a total fermentation time of 18.5 hours. After much consideration, this was found to be the best time for their regular point where fermentation is complete. Once complete, the lot was moved to the top of the drying silo, which is dried at a consistent 35 degrees, with continuous airflow.
